<p style="text-align:left;">I haven&#8217;t exactly been present on this blog.  This last year has brought a lot of changes to my life: work has been busier than ever, I&#8217;m eating more healthfully, and having taken up running means that I get less time at night to prepare (let alone photograph) supper.  But when I saw <a href="http://www.brannyboilsover.com/2011/12/26/souper-bowl-round-2/" target="_blank">Branny&#8217;s Souper Bowl post invitation</a>, I knew I had to participate.</p>
<p style="text-align:left;">We have <a href="http://overgrownwaltz.wordpress.com/2010/02/09/better-than-an-orange-kitty/" target="_blank">two</a> <a href="http://overgrownwaltz.wordpress.com/2010/07/26/introducing-the-newest-family-member/" target="_blank">cats.</a>  Ever since I found out that I&#8217;m not actually allergic to cats, I&#8217;ve known that I wanted a couple and that I wanted to adopt them (rather than buy a specific breed).  Both of ours came from the local shelter, and both have very distinct personalities.  Sierra, the first cat we got and the older of the two,  is a cuddle-bug&#8230; for about two minutes. Then she&#8217;s out of your arms and dashing away to go off on her own&#8230; but if you wait long enough, she&#8217;ll be back, for two more minutes of intense cuddling, purring, and marking your chin with her nose. In any case, this post is dedicated to Sierra, our quiet furball.</p>

<p style="text-align:left;">This soup has been one of my winter staples until recently.  Bacon, homemade croutons, and soft slumped kale- what&#8217;s not to like?!  It&#8217;s filling, salty and almost buttery.  The bacon adds some chew, while the veggies and beans bring the heft. I&#8217;ve made it with both curly and lacinato kale, and both work just fine.  And if you&#8217;re a fan of chorizo or sausage, you may want to try that instead of the bacon.  But one thing is for sure- do not skip the homemade croutons.</p>

<p style="text-align:left;"><strong><em>Kale and White Bean Soup<br />
</em></strong><em>Approximately 4 servings<br />
Adapted from <a href="http://everythingisbetterwithbacon.blogspot.com/2011/01/kale-white-bean-soup.html" target="_blank">Everything is Better with Bacon</a> and a recipe in the <a href="http://www.williams-sonoma.com/products/bride-and-groom-cookbook/?pkey=e%7Cbride%2Band%2Bgroom%7C3%7Cbest%7C0%7C1%7C24%7C%7C3&amp;cm_src=PRODUCTSEARCH||NoFacet-_-NoFacet-_-NoMerchRules-_-" target="_blank">Williams Sonoma Bride and Groom Cookbook</a></em></p>
<p style="text-align:left;">1 pound or 2 cans white beans (if you can&#8217;t get fresh dried beans, go with canned)<br />
4 slices bacon, chopped into 1-inch pieces<br />
2 T. olive oil<br />
1 onion, chopped<br />
2 garlic cloves, diced<br />
1 bay leaf<br />
1/4 to 1/2 t. sage and thyme each (to your taste)<br />
3 -4 medium carrots, peeled and diced<br />
2-3 stalks celery, diced (save the leafy greens if you&#8217;ve still got them)<br />
5-6 cups chicken stock<br />
1 large bunch of kale, ribs removed and roughly chopped<br />
salt and pepper to taste</p>
<p style="text-align:left;">Prepare the beans: if using dried beans, soak overnight and boil for 30 minutes, or prepare according to package directions. They don&#8217;t need to be totally soft as they will simmer in the soup.  If using canned beans, drain and rinse; set aside.</p>
<p style="text-align:left;">In a large dutch oven or kettle, fry the bacon in the olive oil for 3-4 minutes over medium or medium-high heat.  Stir in the onion and sautee for 4-5 minutes more.  Add garlic, sage, thyme, and bay leaf, and stir while cooking for a minute.  Add carrots and celery, stir, and saute briefly; add chicken stock and beans, and bring soup to a simmer.</p>
<p style="text-align:left;">Simmer the soup for at least 25 minutes, but up to an hour to combine flavors and soften vegetables. Stir in the chopped kale (and the celery greens if you&#8217;ve got them), return up to a simmer, and allow the kale to wilt in the soup, about 15 minutes. (If you want a bite to your kale, watch closely and only cook for about 5 minutes. I like mine silky soft and slumpy on my spoon.)  Season with salt and pepper, and serve with homemade salted croutons.</p>
<p style="text-align:left;"><em>For croutons:<br />
</em>Melt 2 tbsp butter in a small sautee pan on medium high.  While melting, add 1/2-3/4 cup bread cubes.  Sprinkle with a few pinches of good salt.  Toss bread around and allow to brown for 2-3 minutes between stirs, for a total of 8-10 minutes. Serve warm or at room-temperature with soup.</p>

<p>1.  <a href="http://www.google.com/search?q=molly+o%27neill%27s+roasted+carrot+and+red+lentil+soup&amp;hl=en&amp;source=hp&amp;gbv=2&amp;gs_sm=e&amp;gs_upl=15l11310l0l11466l53l36l1l10l2l0l344l2715l0.5.4.3l14l0&amp;oq=molly+o%27neill%27s+roasted+carrot+and+red+lentil+soup&amp;aq=f&amp;aqi=&amp;aql=" target="_blank">Molly O&#8217;Neill&#8217;s Roasted Carrot and Red Lentil soup</a>, via <a href="http://www.thewednesdaychef.com/the_wednesday_chef/2011/04/molly-oneills-roasted-carrot-and-red-lentil-soup.html" target="_blank">The Wednesday Chef</a>.  I followed the recipe <em>almost </em>exactly the first time- doubled the paprika and introduced a little immersion blender action- and loved every bite.   A month or so later found myself with a small butternut squash, a lonely sweet potato, and some straggler carrots at the bottom of my crisper, but craving a creamy, bulky soup.  The combo of the three orange veggies worked just as well as the all-carrot version, immersion blender and all.  But as I sat down with the first bowl, and I felt it was missing&#8230; something.  A couple teaspoons of lemon juice stirred in at the end fixed it, and really brightened things up.</p>
<p>2.  <a href="http://www.joythebaker.com/blog/2009/01/oatmeal-blueberry-applesauce-muffins/" target="_blank">Oatmeal Applesauce Muffins at Joy The Baker</a>.  She used blueberries; I used a large peeled-and-chopped Honeycrisp and tripled the cinnamon.  Very welcome at the office on a chilly day. Healthy-ish too!</p>

<p>I had dabbled with canning tomatoes, but had never ventured into jamming territory.  I had always heard how tricky and messing canning jam was, and I seriously think that those people are doing it wrong- it has been easy AND liberating.  Putting up some small-batch jam with whatever I find at the farmer&#8217;s market is now one of my favorites ways to start a weekend!</p>
<p>Although there&#8217;s a lotta flavor going on in these preserves, this is a pretty straightforward recipe and a good &#8220;starter&#8221; if you&#8217;re unfamiliar to making preserves and jams.</p>

<p>I&#8217;m not sure of the subtle nuances between jams and preserves, but I left mine a little looser than your typical jam.  However, I did take an immersion blender to the pot to smooth it out a bit, so it&#8217;s not quite a &#8220;preserve,&#8221; either.   Either way, it&#8217;s delicious on toast and  I&#8217;m thinking that it&#8217;s going to be a killer pastry filling and ice cream topping this winter!</p>
<p><strong><em>Peach vanilla bourbon preserves<br />
</em></strong><em>Adapted from <a href="http://www.tarteletteblog.com/2010/08/recipe-peach-vanilla-jam.html">Tartelette</a> via <a href="http://smells-like-home.com/2011/08/peach-vanilla-bean-jam/">Smells Like Home</a></em><strong><em><br />
</em></strong><em>Makes approximately 5-6 cups</em></p>
<p>3 pounds of ripe peaches, <a href="http://www.google.com/search?hl=en&amp;source=hp&amp;q=peel+peaches+blanching&amp;aq=f&amp;aqi=&amp;aql=&amp;oq=">peeled</a>, pitted, and chopped into 1/2-inch pieces<br />
2-1/2 cups sugar<br />
1/4 cup water<br />
1 vanilla bean<br />
3 tablespoons lemon juice<br />
1/3 cup bourbon <em>(or a bit more if you like!)</em></p>
<p>Place a small plate in the freezer. In a Dutch oven or preserving pan, combine peaches, sugar, and water.  Stir, cover pan, and set on burner set at low for 5 minutes. Meanwhile, split and scrape clean your vanilla bean. Add the vanilla bean seeds and entire pod to the pan. Increase heat to medium and bring mixture to a boil, stirring occasionally.  Once boiling, reduce heat and keep at a simmer for 15 minutes. Remove from heat.  Use an immersion blender to &#8220;pulse,&#8221; and pulverize about half of the fruit.</p>
<p>Put pan back on medium and stir in lemon juice.  Return preserves to a simmer, stirring frequently now.  As the mixture thickens and coats your spoon, pour in the bourbon.  Bring it back up to a simmer and keep stirring for 3-4 minutes.  Once the preserves have thickened up again, use a spoon to put a small amount on the plate in the freezer and return it to the freezer for one minute. This is the freezer test- you can do this multiple times.  If the preserves aren&#8217;t as thick as you&#8217;d like, keep simmering and stirring.  When it&#8217;s as thick as you want, remove from heat.</p>
<p>Store in clean jars in the fridge or process for 10 minutes in a water bath canner.</p>
<p><em>*Notes</em><br />
You can add up to 1/2 cup of any kind of liqueur, according to Helene at Tartelette. If I recall, she also suggested Grand Marnier?<br />
The original yield was 6 to 8 cups, but I got 5 cups (1 cup to each half-pint jar) plus a bit extra to dab on toast. I assume my yield was a bit lower because of the pureeing.</p>

			<content:encoded><![CDATA[<p>Made<a href="http://www.bonappetit.com/recipes/2009/10/spaghetti_with_braised_kale" target="_blank"> this</a> last night for supper, and it was <em>good</em>, though incredibly garlicky.  I had some curly kale to use up, and though her recipe calls for lacinato kale, I found that the curly worked well when I braised it a bit longer than the 20 minutes she calls for, with a little bit more liquid too. </p>
<p>No picture from me- but <a href="http://www.bonappetit.com/magazine/2009/10/how_i_learned_to_love_kale" target="_blank">Molly&#8217;s story </a>about kale is a good read (as expected).</p>

<p>This is not just a risotto with some asparagus pieces thrown in at the end- oh no.   This is a risotto swimming in miniscule flecks of asparagus, fully immersed in green and spring.  It&#8217;s my favorite kind of asparagus recipe- the kind that embraces the use of the entire stalk.  Instead of throwing out the tougher ends of the stalk [or adding them to the finished risotto to be picked around and pushed off to the side], we cook them a bit and then puree, producing a bright-green bubbly liquid.</p>

<p>Then this asparagus puree is stirred into the risotto, alternated with the traditional chicken stock, stirring and coaxing each little grain of rice to absorb as much of the asparagus- its flavor, nutrition, color- as it can.   A very asparagusy risotto indeed! </p>

<p><strong><em><br />
Asparagus risotto<br />
</em></strong><em>adapted from <a href="http://www.nytimes.com/2007/05/02/dining/021mrex.html" target="_blank">Mario Batali</a></em></p>
<p><em>Serves 4-6 as a side; 2 or 3 as a meal</em></p>
<p>1/2 to 3/4 pound asparagus stalks<br />
3 to 4 cups chicken stock<br />
1 shallot, diced<br />
1 T. butter<br />
2 t. olive oil<br />
1 cup short-grain rice<br />
3/4 cup white wine<br />
salt and pepper<br />
freshly grated parmesan for serving</p>
<p>Bring a pot of water to a boil.  Meanwhile, wash asparagus; trim off tough ends and discard.  Chop into 1-inch pieces, setting aside the tips and the pieces from the top two-thirds of the stalks.  Once the water is boiling, toss in the pieces of asparagus from the bottom third of the stalks.  Boil for 4-5 minutes; drain all but 1/4 cup water.  Puree aspargus and 1/4 cup of water in a food processor or blender; set aside.</p>
<p>Place chicken stock in a small saucepan and keep over medium heat.  In a heavy-bottomed skillet, melt butter and oil over medium heat.  Sautee diced shallot for 1 minute, then add raw, unrinsed rice.  Sautee for 4-5 minutes, then increase heat to medium-high.  Add wine and stir while reducing. Once wine is mostly absorbed, add the hot stock in 1/2 cup increments, stirring almost constantly.  Wait to add more stock until the rice has absorbed nearly all of the liquid.</p>
<p>Once 2 cups of the stock have been added and absorbed, alternate adding 1/2 cup of the asparagus puree and 1/2 cup of chicken stock, again allowing the rice to absorb almost all of the liquid before adding more.  At this point, check the rice frequently, wanting it to be cooked but with a bit of an <em>al dente</em> bite.  Once the risotto is creamy and the rice is fully cooked, season with salt and pepper to taste.  Serve with parmesan.</p>

<p>I really wanted to tell you about the asparagus risotto I made this week.  It was creamy and subtle and deliciously spring-ish, while comforting enough for the chilly air that settles around us in the evenings.  But I can&#8217;t.  It would be irresponsible- nay, <em>reprehensible</em>- to allow you to go on living one more day of your life without hearing about this cake.</p>
<p style="text-align:left;">There are cakes for celebrations, and then there are cakes like this.  This is an everyday cake, padding around in day-old jeans and a faded t-shirt, perfect for coffee and a bit of freshly whipped cream.   But at the same time, this is a seriously awesome cake.  This is a make-this-when-your-mother-in-law-comes cake.  Even if it&#8217;s only in jeans, it&#8217;s impressive.  Sweet, sticky, and spicy. What more do you need?!</p>

<p>This is from Dorie Greenspan&#8217;s <span style="text-decoration:underline;">Baking: From my home to yours</span>, except she wrote it as a cranberry-nut cake.  She also included in the margins directions for a peach version, but I decided to springify.  I halved the cinnamon from the original recipe and added half a teaspoon of fresh cardamom-<em> and WOW</em>.  If you&#8217;ve got cardamom, break that bad boy out for this cake.  I don&#8217;t know if there&#8217;s anything I like more in spring than the combination of strawberries, rhubarb, and cardamom.</p>
<p>There&#8217;s also no salt in this cake.  That may dismay some and cheer others.  I will admit that I cheated and used salted butter for the &#8220;topping&#8221; and unsalted for the actual batter, because I had some stray salted laying around.  Don&#8217;t be afraid to add salt if you  know you like it in your cakes and muffins.</p>

<p><strong><em>Strawberry-rhubarb upside downer<br />
</em></strong><em>Adapted from Dorie Greenspan&#8217;s <span style="text-decoration:underline;">Baking: FMHTY</span></em></p>
<p>14 tablespoons butter, at room temperature<em><span style="text-decoration:underline;"><br />
</span></em>6 tablespoons + 1/2 cup white sugar<br />
1 cup AP flour<br />
1 teaspoon baking powder<br />
1/2 teaspoon cinnamon<br />
1/2 teaspoon ground cardamom<br />
1 cup chopped strawberries<br />
1 cup chopped rhubarb<em><span style="text-decoration:underline;"><br />
</span></em>2 eggs<br />
1 teaspoon vanilla extract<br />
1/3 cup whole milk</p>
<p>Center a rack in the oven and preheat to 350.  Put an 8&#215;2 (or 9&#215;2) round cake pan on a baking sheet (you WILL want the baking sheet!).</p>
<p>Melt 6 T of the butter and whisk in 6 T of the sugar. Stirring, bring up to a brief boil, then pour evenly into the bottom of the cake pan.  Sprinkle strawberries and rhubarb on top of the butter-sugar combination and press lightly to flatten.  Set aside.</p>
<p>In a small bowl, whisk together the flour, baking powder, and cinnamon.  In the bowl of a stand mixer, beat the remaining 8 T (1/2 cup) of butter for 2-3 minutes until soft and creamy.  Add the remaining 1/2 cup sugar and cream well for 2-3 minutes.  Add the eggs one at a time, mixing well between each one and scraping the bowl down as needed.  Pour in the vanilla.  Turn the mixer down to low and add in half of the dry ingredients, only mixing until barely incorporated.  Mix in the milk.  Then mix in the remaining dry ingredients. Spoon the batter in the pan over the strawberries and rhubarb, and smooth the top down.</p>
<p>Bake on the baking sheet for 40-45 minutes, until a knife inserted into the middle of the cake comes out clean.  With a knife, loosen the cake from the pan around the edges, but allow to sit for 20-30 minutes to let the cake soak up as much of the juice as it can.  While still warm, carefully turn out the cake onto a plate.</p>
<p>Serve thick slices with fresh whipped cream or ice cream, preferably while still a bit warm (or warmed up for 20 seconds in the microwave.  Enjoy!</p>

<p>For most of you, it&#8217;s <em>that</em> time of year again- when you don&#8217;t want to turn on the oven and heat up the whole house, but you&#8217;ve got nothing for dinner.  And there&#8217;s a limit to how many grilled hamburgers and brats and chicken wings a person can take. Believe me, I&#8217;ve hit that limit. It&#8217;s not pretty.</p>
<p>So what does a person do? The answer is simple, yet incredibly provacative: grilled pizza.  Easily customizable, ready with 10 minutes of prep and 5 minutes of grilling, warm and filling and as homemade as you want it to be.  It leaves your oven switched off, your house cool, and your hearts&amp;minds (not to mention stomachs) satisfied.</p>

<p><em><strong>Grilled pizza<br />
</strong></em>1 pizza crust, store-bought or homemade<br />
cornmeal<br />
pizza sauce, store-bought or homemade<br />
toppings and cheese<br />
pizza peel or large flat baking tray<br />
peanut or vegetable oil and basting brush.</p>
<p>Heat the grill to medium-high, or between 400 and 450 if it&#8217;s got a thermometer. Sprinkle cornmeal on your pan or peel, and lay out your pizza crust. Prep your sauce and toppings&#8211; this is going to move quickly so you&#8217;ll want to be prepared. Brush the top of the crust lightly with oil.</p>
<p>While the grill is warming up, clean the grates and brush them with oil.  Once heated, carefully flip your pizza crust onto the grate, oiled side down.  Brush the (new) top of the crust lightly with oil and shut the lid for 2 minutes. Check every minute after that to check for doneness- check the bottom for a dark golden brown color, and the top should be baking and taking on a light golden color as well. If the bottom is cooking too quickly compared to the top, decrease the heat and close the lid in 30-second intervals.</p>
<p>Once the bottom of the crust is cooked, take it off the grill with the baking sheet.  Close the lid to allow the grill to reheat.  Carefully flip the crust so that the golden-charred side is facing up.  Layer sauce (not too much!), toppings, and cheese as desired.  Slide the pizza back onto the grill, close the lid, and decrease heat if need, so that the temperature hovers near 400. Check every minute to ensure the bottom of the crust doesn&#8217;t burn but allow for the cheese to melt. If your cheese isn&#8217;t melting but your crust is done, close the lid and turn off the grill; let it sit for 2 minutes and check again.  Serve warm with beers or other summery beverages.</p>

<p><strong><em>White pizza sauce<br />

<p><em>Tops one medium-large pizza crust</em></p>
<p>1 tablespoon butter<br />
1 teaspoon olive oil<br />
1 shallot<br />
1 large clove of garlic<br />
1/4 teaspoon each of red pepper flakes and dried thyme<br />
1/2 teaspoon each dried oregano and dried basil<br />
2-1/2 tablespoons flour<br />
1 cup of whole milk (<em>I mix 1/3 c. cream and 2/3 c. skim milk)<br />
</em>1/2 cup parmesan, asiago, or romano (<em>asiago is my personal favorite, though all are great)<br />
</em>hearty pinch of flaky salt<br />
lots of freshly ground black pepper</p>
<p>In a skillet or frying pan, melt together the butter and oil on medium heat.  Finely dice the shallot and garlic, and sautee for 2-3 minutes in the butter. Add in the herbs and pepper flakes; continue to stir and cook for one minute.  Whisk in the flour and cook for 2 minutes, but not so long that the flour darkens.  Slowly whisk in a little of the milk at a time, until you&#8217;ve got a nice white sauce.  Bring to a simmer; reduce heat to medium-low and fold in the cheese.  Season to taste with salt and pepper.</p>
<p>Spread warm sauce over pizza and top with your favorite toppings: we love combinations of cooked chicken or sausage, spinach, grilled asparagus or artichokes, and of course, fresh mozzarella.</p>

(I will say that I&#8217;ll take snow over flooding any day and my thoughts are with everyone in the South who&#8217;ve got much worse weather than we do.)</p>
<p>But in my head (and my stomach), it&#8217;s definitely spring. I&#8217;m craving  my family&#8217;s traditionally &#8220;spring&#8221; foods, like new potatoes roasted with thyme and carrots cooked with a little butter and honey.</p>

<p>We grilled a white chicken pizza with asparagus on Sunday- a perfect meal after a long weekend of patio- and firepit-building.</p>

<p>And, of course, we&#8217;ve been indulging in one of my favorite spring treats- roasted strawberries with boozy whipped cream. It&#8217;s a perfect combination, and of course the extra whipped cream is a natural accompaniment for your first-of-the-season cobblers and pies.<a href="http://overgrownwaltz.wordpress.com/2011/04/26/sprrrriiiing/img_1439-2/" rel="attachment wp-att-1945"><img class="aligncenter size-full wp-image-1945" title="IMG_1439" src="http://overgrownwaltz.files.wordpress.com/2011/04/img_1439.jpg?w=500&#038;h=375" alt="" width="500" height="375" /></a></p>
<p><strong><em>Roasted Strawberries</em></strong></p>
<p><em>I didn&#8217;t get a picture of the roasted berries, but will try to remember to take one and upload later in the week.<br />
</em>Preheat oven to 400F. Line a baking sheet with parchment. Wash and hull <strong>1 cup of strawberries.</strong>  Slice the large ones into quarters and the medium and small guys into halves.  Place on the parchment and sprinkle <strong>1/4 cup white sugar</strong> over the top.  Toss gently to distribute the sugar and coat the berries evenly.  Roast on the bottom rack for 30 minutes; cool at room temperature for 10 minutes and transfer to a container to finish cooling in the fridge (or the freezer, if you&#8217;re as anxious as I am!)</p>
<p><strong><em>Boozy whipped cream<br />
</em></strong>And you thought the strawberries were a cinch?  This is truly the easiest thing in the world:</p>
<p>Set a small bowl and beaters of an electric mixer (or stand mixer) in the freezer for 5 minutes.  Assemble <strong>1 cup of heavy whipping cream</strong> (avoid the ultra-pasturized if possible), <strong>2 teaspoons white sugar</strong>, and <strong>2 tablespoons of brandy,</strong> bourbon, or your favorite liqueur.  Begin whipping the cream in the cold bowl; after a minute, add the sugar and booze. Continue whipping until it&#8217;s set. Serve on anything and everything, including those strawberries.  And go outside to admire the flowers.</p>

<p>My mother-in-law has a special spot in her heart for biscotti, and her passion has been passed down to her son and daughter. With both siblings&#8217; birthdays in April and Mother&#8217;s Day in May, what better opportunity for the daughter-in-law?</p>
<p>And the best part is, my mother-in-law loves them.  They&#8217;ve been part of her Christmas gift for the last two years, and both times she called in January to tell me that she had hidden and hoarded them, enjoying one every few days to make them last.  She called me after she ate the last one and told me she needed more, pronto- the biscotti were helping her maintain her sanity.</p>

<p>When I first set out to make biscotti, I had my heart set on a &#8220;mocha&#8221; flavored cookie and I felt like I had won the lottery when I found this recipe.  I increased the espresso powder slightly, and the effect is exactly what I was looking for&#8211; crunchy, crumbly texture with an initial pungent punch of espresso, followed by the bitter/smooth combo of 60% cacao chocolate. Add in the ribbons of white chocolate on top and the occasional burst of white chocolate sweetness in the biscotti, and you&#8217;ve got heaven. Italian cookie heaven.</p>

<p>I use Ghirardelli chocolate chips, because the quality and taste is pretty consistent, I think they&#8217;re much better than some of the cheaper brands, and they won&#8217;t break the bank.  Target seems to have them every Christmastime, so I stock up for a few batches throughout the year.</p>
<p><em><strong>Chocolate espresso biscotti<br />
</strong>Adopted from Dorie Greenspan&#8217;s <span style="text-decoration:underline;"><a href="http://www.amazon.com/Baking-Home-Yours-Dorie-Greenspan/dp/0618443363/ref=sr_1_3?ie=UTF8&amp;qid=1292607344&amp;sr=8-3">Baking: From My Home to Yours</a></span></em></p>
<p>2 c all-purpose flour<br />
1/2 c unsweetened cocoa powder<br />
3 T instant espresso powder <em>(I used the darkest instant coffee powder I could find, because I couldn&#8217;t find instant espresso)</em><br />
3/4 t baking soda<br />
1/4 t baking powder<br />
1 t salt<br />
6 T unsalted butter,  room temperature<br />
1 c sugar<br />
2 large eggs, lightly beaten<br />
1 t vanilla extract<br />
1/2 c (4 oz.) bittersweet chocolate, coarsely chopped or chips<em></em><br />
2 c (16 oz) white chocolate, chopped or chips<em><br />
</em></p>
<p><em>Directions:<br />
</em>Center a rack in the oven and preheat to 350 degrees F.  Line a baking sheet with parchment paper. In a medium bowl, sift together the flour, cocoa powder, espresso powder, baking soda, baking powder and salt.</p>
<p>In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar together on medium speed until pale, about 2 minutes.  Add the eggs and the vanilla and beat for another 2 minutes. <em>(Don’t worry if the mixture looks funky; it gets better, I promise.)</em> Reduce the mixer speed to low and mix in the dry ingredients gradually, mixing only until a dough forms.  Scrape down the sides of the bowl and mix in 1 cup of the white chocolate and all of the bittersweet chocolate.</p>
<p style="text-align:left;">Sprinkle some flour on a clean work surface.  Dust your hands with some flour – the dough may be very sticky.  Turn the dough out and knead in any dry ingredients that might have escaped mixing, and then divide the dough in half.  Working with one half at a time, roll the dough into 10-inch long logs.  Transfer logs onto the baking sheet.  Flatten both logs so that they are 1/2 to 1 inch high and a couple inches apart.</p>
<p style="text-align:left;">Bake the logs for 20-25 minutes, or until they are just slightly firm.  The tops should spread and crack during baking.  Remove the baking sheet from the oven, place on a wire rack and allow to cool for 20 minutes.  Then working with one log at a time, cut each log into slices 1/2 to 3/4 inch thick&#8211; cut parallel to the shorter edge.  Slightly separate the slices on the baking sheet.  Bake the cookies again, this time for 10 minutes.  Transfer to a rack to cool.</p>
<p>While cooling, melt the remaining white chocolate.  <em>(I add 1/2 tsp. of shortening, if I&#8217;ve got it, to the melting chocolate to encourage a glossy consistency.) </em>With a teaspoon, drizzle the white chocolate over the biscotti in ribbons. Let the chocolate set before serving or storing.</p>
<p><em>*These cookies can be stored in a sealed container for a few weeks, or indefinitely in the freezer- if they last that long. Enjoy!</em></p>

<p>I had barley in my pantry and a hankering for summer, and this is what Google led me to. (Yes, I was inspired by a pregnancy website, but I am not at all pregnant!)  I left out the tomatoes- they&#8217;ll have to wait until August.  This will be even better with fresh sweet corn off the cob!</p>
<p>My favorite part of this recipe is the versatility. I scooped it up and inhaled it warm off the stove, picked at it while it was cooling on the counter, and ate it like unashamedly by the bowlful straight out of the fridge.  Warm or cool, this salad is an easy crowd-pleaser.</p>

<p><em><strong>Barley, corn, and roasted red pepper salad<br />
</strong>adapted from <a href="http://www.whattoexpect.com/pregnancy/eating-well/barley-pepper-and-corn-salad.aspx" target="_blank">What to Expect</a></em></p>
<p><em>Serves 4</em></p>
<p><em>*If you&#8217;re short on time, you can skip toasting the barley, but the toasting process does really add to the flavor and texture of the dish. Don&#8217;t skip if you can help it.<br />
</em></p>
<p>1 medium red bell pepper<br />
1 c. pearl barley<br />
2-1/2 c. chicken broth<br />
1 Tbsp olive oil<br />
1 cup fresh or frozen corn kernels<br />
1/2 cup sliced scallions or diced onion<br />
2 Tbsp lime or lemon juice</p>
<p>First, roast the bell pepper.  Using fire-proof tongs or a long kitchen fork, place bell pepper over a gas flame, or place in an baking dish under a high broiler,  and turn  until blackened on all sides. Enclose in paper bag or in a  covered  bowl; let stand 10 minutes. Peel, seed, and dice.</p>
<p>While cooling and prepping the red pepper, toast the barley in a large skillet for about 10  minutes on medium-high, shaking the pan often. Add broth to pan; bring to a boil.  Reduce heat to low, cover, and cook 30 minutes or until broth is  almost absorbed and barley is tender. Add in oil, diced onion and corn kernels; stir and sautee for 10 minutes.</p>
<p>Once onion is translucent and corn is cooked, fold in the diced red pepper and remove from heat. Allow to cool for 10 minutes at room temperature, then toss with lime or lemon juice. Season  with salt and pepper to taste.  Serve warm, at room temperature, or cool.</p>
